I love poffins, especially sweet poffins! My favorite are Pecha poffins with some light frosting. 

Here’s the recipe if anyone is interested in trying them out for yourself! This is a very sweet and soft poffin, just like Pechas.

  • For the poffins:
    1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • Pecha berries*

    For the icing:
    • 1/2 cup powdered sugar
      tablespoon cream
      teaspoon vanilla extract
       
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
  • In a medium bowl, cream together the sugar and butter. 
  • Beat in the eggs, one at a time.
  • stir in the vanilla. 
  • Combine flour and baking powder, add to the creamed mixture and mix well.
  •  Finally stir in the milk until batter is smooth. 
  • Pour or spoon batter into the prepared pan. I’m guessing most people at home don’t have poffin tins… but you can use a muffin pan! They’ll likely have a crown like regular muffins do.
  • Bake 20 to 25 minutes. Poffins are done when it springs back to the touch.
  • While the poffins are cooling, prepare the icing:
  • Combine the powdered sugar and half and half or cream and stir until the sugar is completely absorbed by the cream.
  • Add the teaspoon of vanilla extract. You can also add a few drops of almond extract, but be careful—this extract is very strong! Only use a few drops.
  • The icing is ready to drizzle over scones, sweet biscuits, etc. I drizzle on the icing with a small spoon in a zig-zag pattern. It looks very pretty.

*short on Pecha berries? Substitute for peach slices or strawberries. Strawberries are recommended!
